Turkey and Spinach Stuffed Peppers
Ingredients
4 bell peppers, tops cut off and seeds removed
1 lb ground turkey
1 onion, diced
2 cloves garlic, minced
1 cup cooked quinoa or brown rice
2 cups fresh spinach, chopped
1 cup tomato sauce
1 tsp dried oregano
1 tsp dried basil
Salt and pepper to taste
1/2 cup shredded mozzarella cheese
Directions
Preheat oven to 375°F (190°C).
In a large pan, cook ground turkey over medium heat until browned. Add onion and garlic, and cook until softened.
Stir in cooked quinoa or rice, spinach, tomato sauce, oregano, basil, salt, and pepper. Cook until spinach is wilted.
Stuff bell peppers with the turkey mixture. Place in a baking dish and cover with foil.
Bake for 30 minutes. Remove foil, sprinkle with cheese, and bake for an additional 10 minutes or until cheese is melted.
