Quinoa and Vegetable Stir-Fry
Ingredients
1 cup quinoa
2 cups water or vegetable broth
1 tbsp olive oil
1 onion, diced
2 cloves garlic, minced
1 bell pepper, chopped
1 zucchini, chopped
1 cup broccoli florets
1 carrot, julienned
1 cup snap peas
3 tbsp low-sodium soy sauce
1 tbsp sesame oil
1 tbsp sesame seeds
Salt and pepper to taste
Directions
Rinse quinoa under cold water. In a medium pot, bring water or vegetable broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy and water is absorbed.
In a large pan, heat olive oil over medium heat. Add onion and garlic, and sauté until fragrant.
Add bell pepper, zucchini, broccoli, carrot, and snap peas. Stir-fry for about 5-7 minutes or until vegetables are tender-crisp.
Add cooked quinoa to the pan and mix well.
Stir in soy sauce and sesame oil. Cook for another 2-3 minutes, stirring constantly.
Sprinkle with sesame seeds, salt, and pepper to taste. Serve hot.
